GREEN tea is an unfermented tea which is withered and steamed before drying to prevent oxidation and fermentation and retain the leaves' green color.

BLACK tea has a stronger color and flavor than green tea. It is prepared from leaves that have been fermented/oxidized before being fully dried, and due to the oxidation process the polyphenol content is less than that of green tea.

PU'ERH teas are known as "post-oxidized" because, after wilting in the sun-drying, the leaves are piled, dampened, and enzymes are introduced whose external actions on the tea result in oxidation. Pu 'erhs are earthy, deep, and full of flavor and aroma. Pu 'erhs come in two types: cooked (black) or raw (green).

OOLONG teas are the result of partial oxidation, often retaining a great deal of their green color. Many oolongs are rolled, allowing for multiple steepings.

Dark Sumatran
Creamy notes, musky, and touches of cinnamon. Rare, unique oolong.
Thai Blossom
Exceptional, high-elevation Thai oolong. Sweet and floral notes.
Frost Oolong
Leaves harvested after first Spring frost. A brisk brew with flavors of baked bread and sliced apples
Emerald Oolong
A machine-reaped oolong produced in the foothills near Mingjin township in Nantou county, Taiwan. It is a small-leaf Chinese Wu-Yi varietal and is lightly roasted. Plucked up to 6 times per year, the late winter and early spring harvests tend to produce ideal tea. Ours is from a winter harvest.

WHITE tea is a form of tea in which young leaves and buds are rolled and dried. It is the least processed form of tea.
